1 cup non-fat cottage cheese
1 cup egg whites (I usually use the boxed egg whites)
1 cup Quaker quick oats
Combine all 3 ingredients in a blender and blend until oats are finely chopped.
This will make your batter and you just cook them like you would normal pancakes. Don't be turned off if you don't like cottage cheese! You can't even taste it and it keeps the pancakes nice and moist. Ben actually prefers these to normal pancakes because they aren't so dry. I eat them plain but he and Maddie put butter and syrup on theirs. Lately I've been making a double batch and then putting them in a plastic sandwich bag in the fridge. When I want one I just pull it out and put it in the toaster for a quick snack. So yummy! Here's the nutrition information for anyone who is wondering.

Low on calories, fat, and sugar, and a good amount of protein. 1/4 cup of batter makes pancakes this size (that's a small plate)
